The lamb shank is cut from the bottom section of the leg, just below the knee. Our pasture raised lamb shank is rich and pastoral in flavor. We suggest searing your shanks on each side for about 3 minutes to create a crust, then braising in a red wine sauce at 325 Fahrenheit for 2 - 2 1/2 hours. Serve over mash potatoes and polenta for unforgettable meal!
